CNY Japanese Treats 2 Shermay's Cooking School

One week to go!!Although I have done with my new year celebration, I am getting excited again in the mood of CNY. I will be teaching treats for CNY at Shermay's Cooking Schoolon 30th January 2011(Sun)As I understand that there is almost no time left to practice for you, all the items I'll be teaching are easy to make a lot at a time,not required to have hard practice.
Such as green tea cookies. A veery simple butter cookies but by using cookie cutters that represents spring such as plum flower,Japanese bush warbler(for us, the bird means spring itself), you can make it festive.
yuzu mousse
with candied yuzu zest
Saikyo miso nuts caramel tartlets.You might find it unusual to use miso(fermented bean paste)for sweets, but there are many Japanese traditional sweets with miso paste. This "saikyo miso" is one of the sweetest miso that contains glucose and sugar which gives the sweets good flavour with slight savory taste.
Queen of Sheba. My mother's , a rum lover's siganature cake.
as for bonus recipes, pineapple and yoghurt cake
a super moist buttery easy cake which I can make with my eyes close.
and sesame nama caramel; very creamy soft toffee with Japanese sesame paste.

Winter Dinner MenuC

It's been extremely cold in Japan I heard. It snows even in Kyusyu Island ,the comfortably warm(in summer it's crazy hot sometime, I love it!) area in which it hardly gets cold enough to see it snows. Honestly, I am scared of winter,snow, dark night. But there are uncountable winter dishes which I wish I could have in cold winter like this year's. This is my number one of all the winter dishes I dream of (and for many many Japanese people too) Simmered Yellow Tail and Radish(Buri Daikon)

Gomadoufu; it called tofu but no soybean in this dish.it's made with arrow root starch and sesame and kelp stock. Simple but time consuming.Troublesome but it worth spending 15minutes on stirring.
Spinach with yuzu soysauce.

CNY Japanese Treats 1 Shermay's Cooking School

Akemashite Omedetougozaimasu(Happy New Year!)
This is the greeting we exchange on New Year's day that is 1st of January in Japan.
We have to finish shopping and spring cleaning by New Year's eve.
Also,we prepare new year's dish by then and hardly cook during new year as this is the time we celebrate all together and also the time for house wives to take some leave from continuous endless domestic work.
It's time for gathering, sharing,wishing for health,prosperity, longevity.
Isn't it very similar to CNY?
I will be teaching treats for CNY at Shermay's Cooking Schoolon 16th January 2011(Sun) ;
White chocolate and matcha green tea marble cake.


Tarte aux Ananas
A sweet four-layer(Tart Base,almond cream,pinepapple jam and sauteed pineapple) pastry tart with almond cream & sautéed pineapple.
Double Layer Mandarin Orange Jelly
Two-layer jelly of Japanese mandarin orange (Mikan) juice and light creamy milk.
This is going to be fast & easy yet very refreshing & tasty. A fuss free two layer jelly.

Houji Cha Cookies
Butter cookies with Japanese roasted green tea.The sugar surface represents the thin ice of winter, giving way for the rejuvenated spring earth.
As for the bonus recipes(for you to try out at home)peanuts butter and jelly square also you'll take home the recipe for White & Black Sesame Tuilles,lacy caramelized thin cookies with white & black sesame seeds.
