Pink & Yellow Cupcakes

Cupcake cupcake-It's much more popular in Singapore than Japan.
Blue color icing,purple color frosting, butter cream,mini roses made with marge cream ,,,it's fun, it's cute, expecially kids love cupcakes when something fun or cute is going on on top of the cakes. I know that.

But you know what, our world(especially south east asia )is filled up with such a beautiful NATURAL colors. Why should we use artificial ones when we have good and natural ones.
The idea is always in my head when I bake /cook.
Making cupcakes with frosting is not an exception.
first of all, you need base cake.

JAPANESE Sweet Potato Tart

After having lived in abroad for 9yrs ;I could cry if I watch cherry blossoms are in full bloom on TV that I had never cared when I lived in Japan.I envy people in Japan when I hear it snows though I don't like cold place.
Just like that after having lived in Singapore for 9yrs though you can find most of ingredients for Japanese cuisine-yes, this country is wonderful place-I must admit I tend to overestimate the taste when it has Japanese something. But this sweet potato tart..Setting aside all the nostalgia and homesickness, I still simply love it.Flaky crustTopped with cinammon whipped cream.BEST!It is not overestimation for sure.

White Chocolate Cake/Honey& Lemon Biscuits

"The Queen of Sheba", I guess that's the name of the chocolate cake my mother, who has been a hard drinker (and I definately am her daughter),who ordered one bottle of whisky on the first date with my father then her fiance,used to bake very often.She always brushed a lot of dark rum until the cake couldn't absorb anymore.
It is not suitable for kids I know but it is one of the cake that reminds me of my childhood.
This time I used white chocolate, used less alcohol(not rum but cognac),less sugar, less butter.

RED BEAN PASTE-Green Tea Chiffon Cake & Ichigo Daifuku

Matcha green tea Chiffon & Homemade Hokkaido Red Bean Paste & Green Tea w Whipped Cream

The Main thing of this plate is Red Bean Paste. I cooked Canadian red bean and Hokkaido "Dainagon"red bean usinga the same amount of water, sugar, same type of pot.
The difference of taste turned out so big that I decided to use the beans from Hokkaido.
It takes 2hrs to cook redbean but it's worth trying it
In fact, I cooked this red bean paste to teach ;Ichigo Daifuku-Red Bean and Strawberry Mochi
I must admit that our cuisine, especially desserts have no "wow"action, flavour, oh well,they are rather boring if you see how to cook and smell.
But yesterday, I saw "wow"impression on my student's face when he tried the first scoop of red bean paste.
That made me really happy because I always make the same face whenever I have homemade red bean paste.

OKA-SAN no PULIN - My Mother's Custard Pudding

"PULIN"the word came from "PUDDING",this is my eternal favorite in the entire galaxy since I was a child.

My mother, a full-time house maker of three(I am the middle), hasty, open minded woman, she now finished raising up her children, decided to eat anything convenient.
But when I was little, she had never given us food that contains artificial coloring, MSG, preservatives.

So my childhood , I believed then , was miserable.
Kids society is very competitive,sometimes brutal. I was always ashamed to open my lunch box ,always scared of my friends looked into my bento box.

My friedns had octopus shaped RED sausages.
Me, I had BROWN sausages in octopus shape but had only 4legs.

My friends had green color jelly for their dessert.
Me, I had peeled fruits or simple buttercake.

How I wished my mother could have put something pretty in!!

But after a few decades,now I appreciate her for not to have given in her kids' blah-blah.
Not for litening to our
"All my friends have pretty bentos.Only my bento is dirty."

Aligato, Okaasan(Thank you mother).

After her strict and patient taste buds training ,my tongue is still able to recognize natural taste and I know how to stay away from unhealthy things.
This custard pudding was part of training.
And this is the dessert I love most that reminds me of the woman I love the most in this galaxy.

Red Bean Cream Roll

Matcha(Japanese green tea powder)Roll with Red bean cream.
Nowadays you can find so many kind of "matcha-sometheing"sweets that I am getting bored with it.
Matcha macarron, matcha cookies, matcha muffins, matcha chiffon cake...well, no thanks, I had enough.
Matcha is always the best when you have it as drink,as it is ,I believe.
(and please , do not ask sugar for the tea, please)

But I choose matcha to use for making sweets only when I have a craving for red bean paste.
To create the best match for readbean, matcha is always the first option for me and the second is whipping cream or condensed milk.
So this cream roll is perfection for me, and I will never be bored with .
