Complete Vegetarian Bento

This is complete vegetarian bento containing no meat, no fish , no eggs, no dairy products , and no onions. I have made this recipe to pass on to one lady with volunteerinsm. I hope it'll work out.
rice balls(onigiri)with stir fried sweet corn.
Potato croquette with shiitake mushroom. I used chinese yam instead of eggs as an adhesive to bread crumbs.
french beans with cashew nuts sauce, simmered deef fried tofu and carrot
soyabean milk agar with peach.

Potato Croquette Bento

Potato Korokke(Potato Croquette),I can see clearly the influence of the western food culture from this dish.
But it has already got into our food cluture so long that you could find the potato croquette even in Zen cuisine or in home style cooking.
Everybody has concept of"my mother's potato croquette" from my reserch.
I usually ask all japanese people I encounter about their mothers'(sometime fathers')croquette and they have the answer.

Basic answer:stir fried minced beef and chopped onion & mashed potatos.
My mother's croquette is following this basic.She intentionally does not mash the potatoes completely, leaves some potato chunks for texture.
I use minced pork and braised hijiki seaweed instead of beef and onion.
Seaweed in potato?? It might sound strange but I am a huge fan of seaweeds, and well I believe hijiki goes well with potatoes.

For my fiance, who is a huge spice fan that I add chopped green chilies and beef instead.
That is also beautiful combination.
I will also be teaching stir fried squid with butter & soysauce/ Marinated spinach & carrot.

Red Bean Cream Roll

Matcha(Japanese green tea powder)Roll with Red bean cream.
Nowadays you can find so many kind of "matcha-sometheing"sweets that I am getting bored with it.
Matcha macarron, matcha cookies, matcha muffins, matcha chiffon cake...well, no thanks, I had enough.
Matcha is always the best when you have it as drink,as it is ,I believe.
(and please , do not ask sugar for the tea, please)

But I choose matcha to use for making sweets only when I have a craving for red bean paste.
To create the best match for readbean, matcha is always the first option for me and the second is whipping cream or condensed milk.
So this cream roll is perfection for me, and I will never be bored with .

Fish, Fish, Fish

It is said we Japanese consume 63.8kg of fish&seafood per person in avarage.It's 4times the quantity of the world avarage.
Well,I am definately one of us who eat more fish than meat and here are my favorite fish dishes.
Sake no Nanban Zuke- Deep fried salmon marinated with sweet sour sauce.

Saba no Miso Ni - Simmered Mackerel in Miso Sauce.This hearty dish is found at many diners in Japan.
I can easily finish two bowls of rice when I have this dish.

+I would like to show you how to cut whole fish into fillet and am going to show you simple grilled fish using local fish like snapper, mullet etc.
If you hesitate to do it, please do not worry about it.I will handle it while you are closing your eyes.
Let's enjoy fish feast together.

Braised Chicken & Vegetables Chikuzen Style -Chikuzen-Ni

Chikuzen-ni Braised Chicken & Vegetalbes.This dish is one of the most popular simmered(or braised) dishes in my country if I am not wrong.

Although all the ingredients are modest such as carrot, gobo(burdock), lotus root, konnyaku, dried shiitake mushroom , this dish is oftenly served on festive occasions such as the girl's day, New Year's day and birthdays.
Its taste is also so modest that you might not be able to find it so 'wow'.

But still I would dare to give lessons and would like to share the recipe with you because I believe this dish can tell what we Japanese usually eat at home .
In other words, this is the best dish when we want to show our food culture which uses various kinds of vegetable that is the key for our longevity.

Trust me, we eat this kind of dish more than raw fish.
To accompany with the modest dish,I will be teaching Agedashi-tofu Deep Fried Tofu with Amber Sauce.This is rather popular dish in Singapore so I don't think I have to explain what it is.You know, it is yummy .Even yummier when you cook it by yourself.
